Why we do this

Every independent restaurant is a bet somebody made — on a recipe, a corner, a neighborhood. Most of those stories never make it past the kitchen door. The Bistro Spotlight exists to tell them properly: in the owner's own words, with the details that make each place unlike anywhere else.

Each spotlight starts with a sit-down conversation. We ask about the beginning — the pop-up, the family recipe, the lease everyone said was a mistake. We photograph the room, the food, the people. Then we write it the way it deserves to be written.
