A market becomes a bistro
Scott Stanley opened Max's Market and Bakery on the corner of Bullard and West in June 1997, naming it after his son and building the business around handcrafted artisan breads and gourmet sandwiches. J.J. Wettstead, who had worked restaurants since he was a fifteen-year-old busboy, joined the team and bought the business in 2008.
Under Wettstead, the market became Max's Bistro & Bar — a full-service California bistro without losing the founding commitment to old-world bread.
Sourcing from the boats
Wettstead runs the kitchen seafood-first — day-boat scallops, Alaskan halibut, salmon, and daily specials that change with the deliveries. He describes the room as 'upscale chic but very approachable.'
He has been quietly sourcing local produce for more than two decades, long before farm-to-table was a marketing line.
The Bullard corner
The Bullard-and-West corner is northwest Fresno's dinner-and-drinks anchor — a mid-century neighborhood shopping cluster that locals treat as their downtown. Max's shares the block with independent boutiques and a wine shop; the dining room hangs about fifty original Tomas Panzarino canvases in a zinc-and-polychrome style.
On any given weeknight it's celebration tables, birthday flights, and regulars at the bar.
